Crock Pot Pork

Ok, so before last night’s game I made a new recipe for dinner.

Now my family knows that “new recipe night” may mean “take out night” if the new recipe isn’t edible.  Which, I will say, has happened a time or two.  Luckily last night wasn’t one of those nights.

I found this recipe on Jenna’s blog and as soon as I saw the picture of the pulled pork and the crock pot, I was sold.  I think the crock pot is every mom’s best cooking tool.  I don’t use mine enough.  But on days like yesterday when there is baseball and all kinds of other things going on, it’s so nice to know that dinner is already in the works.

So, without further ado…you should make this, mmmkay?  (And I know I don’t eat meat so I can’t vouch for it firsthand, but my family gives it two thumbs up!)

Crock Pot Pulled Pork

adapted from Eat, Live, Run

5-6 lb. pork butt (Boston butt)

3/4 bottle Lawry’s Herb & Garlic Marinade

3/4 bottle of your favorite barbecue sauce

1 onion, chopped

2 tsp salt

2 tsp ground mustard

1/2 tsp black pepper

Rub the salt, ground mustard and pepper all over the pork then brown on all sides in a heavy pan on medium/high heat. This should take about 10 minutes.

Remove browned pork from the pan and place in a crock pot along with the chopped onion and sauces. Turn crock pot on high and cook for about 8 hours. You’ll know the pork is ready when it falls apart when stabbed with a fork.

Remove the pork from the crock pot and shred with a fork then place back in the sauce and serve.

Hmmm, my sons went hunting last year and I have some wild boar roasts in the freezer and always looking for a worthy recipe. Maybe I will try it.
